Satisfying Chicken Taco Casserole for Family Gatherings

Layers of tender chicken, zesty spices, and melted cheese create a satisfying Chicken Taco Casserole, ideal for cozy family dinners or casual gatherings.

Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 can black beans 15 oz, rinsed and drained
  • 1 can corn 15 oz, drained
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 8 small corn tortillas cut into quarters
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, and taco seasoning.
  3. Spread a thin layer of the chicken mixture on the bottom of a greased baking dish.
  4. Layer half of the tortilla quarters over the chicken mixture.
  5. Add half of the remaining chicken mixture on top of the tortillas.
  6. Sprinkle one cup of shredded cheese over the chicken mixture.
  7. Repeat the layers: remaining tortillas, chicken mixture, and finish with cheese.
  8. Bake in the preheated oven for 25–30 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool for 5–10 minutes.
  10. Top with sour cream and fresh cilantro before serving.
