Ingredients
  

  • 12 large eggs
  • 1 cup milk
  • 1 lb breakfast sausage crumbled
  • 2 cups diced bread preferably sourdough or French
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the crumbled breakfast sausage over medium heat until browned.
  3. Add the diced bell peppers to the skillet and cook for another 2-3 minutes until softened.
  4. In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  5. Add the cooked sausage and bell pepper mixture to the egg mixture, followed by the diced bread and green onions. Stir to combine.
  6. Gently fold in the shredded cheddar cheese, taking care not to overmix.
  7. Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
  9. Let the casserole cool for 10 minutes before slicing and serving.
