Ingredients
  

  • 400 g spaghetti
  • 4 large onions thinly sliced
  • 60 ml olive oil
  • 2-3 tablespoons chili oil
  • Salt to taste
  • Fresh parsley chopped (optional)
  • Parmesan cheese grated (optional)

Method
 

  1. Prepare the onions by slicing thinly and setting aside.
  2. Heat olive oil in a large pan over medium heat. Add the sliced onions and a pinch of salt.
  3. Caramelize the onions for 25-30 minutes, stirring occasionally.
  4. While the onions are caramelizing, cook the spaghetti according to package directions until al dente.
  5. Reserve 1 cup of pasta water, then drain the spaghetti.
  6. Once the onions are caramelized, add the drained spaghetti to the pan along with chili oil and a bit of reserved pasta water.
  7. Adjust the seasoning, adding more chili oil or salt to taste.
  8. Serve immediately, garnished with fresh parsley and grated Parmesan if desired.
