Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can 10 oz enchilada sauce
  • 8 corn or flour tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large skillet, cook the ground beef over medium heat until browned.
  2. Add chopped onion and minced garlic to the skillet, cooking until softened.
  3. Stir in the chili powder and cumin, cooking for another minute.
  4. Pour in the enchilada sauce and mix well, simmer for about 5 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Soften the tortillas by wrapping them in a damp paper towel and microwaving for about 30 seconds.
  7. Fill each tortilla with the beef mixture, roll them up, and place seam-side down in a baking dish.
  8. Once all tortillas are in the dish, pour remaining enchilada sauce over the top and sprinkle with cheese.
  9. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.
  10. Remove from the oven and allow to cool for a few minutes before serving.
