Wash and dry the potatoes thoroughly.
Pierce each potato with a fork several times.
Brush the potatoes with olive oil and sprinkle with salt and pepper.
Place potatoes on a baking sheet and bake for 25-30 minutes until tender.
While the potatoes bake, prepare the filling by combining sour cream, cheddar cheese, crumbled bacon, chives, garlic powder, salt, and pepper in a bowl.
Remove the baked potatoes from the oven and let them cool slightly.
Cut the top third off each potato and scoop out some of the flesh, creating a small hollow.
Spoon the filling into each potato till overflowing slightly.
Return the filled potatoes to the oven for an additional 10-15 minutes, until golden and heated through.
Garnish with additional chives or bacon if desired before serving.
