Ingredients
  

  • 12 small red or yellow potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 slices of crispy cooked bacon crumbled
  • 2 tablespoons chives finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for brushing

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes thoroughly.
  3. Pierce each potato with a fork several times.
  4. Brush the potatoes with olive oil and sprinkle with salt and pepper.
  5. Place potatoes on a baking sheet and bake for 25-30 minutes until tender.
  6. While the potatoes bake, prepare the filling by combining sour cream, cheddar cheese, crumbled bacon, chives, garlic powder, salt, and pepper in a bowl.
  7. Remove the baked potatoes from the oven and let them cool slightly.
  8. Cut the top third off each potato and scoop out some of the flesh, creating a small hollow.
  9. Spoon the filling into each potato till overflowing slightly.
  10. Return the filled potatoes to the oven for an additional 10-15 minutes, until golden and heated through.
  11. Garnish with additional chives or bacon if desired before serving.
