  • 1 pound dried black-eyed peas
  • 6 ounces bacon chopped
  • 8 ounces smoked sausage sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • Salt to taste

Method
 

  1. Soak the black-eyed peas overnight.
  2. Drain and rinse the soaked black-eyed peas.
  3. Cook the bacon in a large pot over medium heat.
  4. Add the onions and garlic, sautéing until translucent.
  5. Stir in the sliced sausage and cook for an additional 5 minutes.
  6. Add the drained black-eyed peas and chicken broth.
  7. Season with thyme, black pepper, and salt.
  8. Reduce heat and simmer for 45-50 minutes.
