- Preheat your oven to 400°F (200°C).
- Prepare the Brussels sprouts by trimming and halving them.
- Cut the bacon into small pieces.
- In a large mixing bowl, combine Brussels sprouts and bacon, drizzle with olive oil, and season with salt and pepper.
- Spread the mixture onto a baking sheet in a single layer.
- Roast in the oven for 20–25 minutes, stirring halfway through.
- If using, drizzle with balsamic vinegar right before serving.
