Ingredients
  

  • 2 medium acorn squash
  • 1/4 cup maple syrup
  • 1/2 cup pecans chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. In a large bowl, whisk together the olive oil, maple syrup, cinnamon, salt, and pepper.
  4. Place the squash halves cut-side up on a baking sheet and brush the maple mixture over them generously.
  5. Sprinkle the chopped pecans evenly over the squash halves.
  6. Roast in the preheated oven for 30-40 minutes, or until the squash is fork-tender and caramelized.
  7. Remove from the oven, let cool slightly, and serve.
