Method
- Preheat your oven to 400°F (200°C).
- Cut the acorn squash in half and scoop out the seeds.
- In a large bowl, whisk together the olive oil, maple syrup, cinnamon, salt, and pepper.
- Place the squash halves cut-side up on a baking sheet and brush the maple mixture over them generously.
- Sprinkle the chopped pecans evenly over the squash halves.
- Roast in the preheated oven for 30-40 minutes, or until the squash is fork-tender and caramelized.
- Remove from the oven, let cool slightly, and serve.
