Ingredients
  

  • 1 lb baby carrots
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the baby carrots.
  3. In a mixing bowl, combine honey, minced garlic, olive oil, salt, and pepper.
  4. Add the carrots to the bowl and toss to coat evenly.
  5. Spread the carrots on a baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, flipping halfway through.
  7. Check for doneness: carrots should be tender and slightly caramelized.
