Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes optional

Method
 

  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, combine flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined.
  5. Turn the dough out onto a floured surface and gently knead it a few times.
  6. Pat the dough into a 1-inch thick rectangle and cut out biscuits.
  7. Place the biscuits on a baking sheet, close together for soft sides or spaced apart for crusty edges.
  8. Bake for 12–15 minutes or until golden brown.
  9. While the biscuits bake, prepare the sausage gravy: Brown the sausage in a skillet over medium heat.
  10. Sprinkle the flour over the browned sausage and stir.
  11. Gradually add milk, stirring constantly until the gravy thickens.
  12. Season with black pepper and crushed red pepper flakes, if desired.
  13. Serve the biscuits topped with the sausage gravy, and enjoy!
